The authentic balsamic vinegar is made in Modena, Italy. We aim at making everything as close to the original as possible but at the same time produce local food.
That is why Harmonica Organic Balsamic Vinegar is inspired by Modena craft production, celebrating local Bulgarian red grapes and Crete Island grape must fro exquisite taste. Respect for traditions, respect for land.
What's in it
Organic wine (6%) vinegar (70%), organic concentrated grape must (30%) and organic caramel for extra colouring. Contain sulfites. May contain residues due to natural processes.
How it's made
Natural product made by fermentation of red grapes where sugar in the grapes is broke down by bacteria and yeast to alcohol. In the second stage of fermentation we apply special conditions (oxygen and temperature) in order to activate the second stage of fermentation, in which alcohol is transformed to vinegar. Finally we add grape must from Crete Island for excellent taste.
