Who would have known something so simple could taste so good! Goat cheese is to many a gourmet experience for the senses. To others it’s a traditional flavour and a childhood memory from grandma’s village. We’ve also seen people wrinkle their noses at the sniff of goat cheese.

Well, we’ve managed to crate a sirene with a perfectly balanced taste and aroma that even the fussiest cheese-lovers will enjoy.

What's in it

harmonica's sirene is made of organic goat's milk, using a traditional cheese culture of Lactobacillus bulgaricus и Streptococcus thermophilus, rennet and a pinch of salt.

How's it made

Goats stand out among other herbivores for being discerning eaters. They never fail to select the freshest plants and herbs when grazing. Good quality pasture gives their milk an intense, smooth flavour and a rich amount of vitamins and minerals.

We add the cheese culture to the milk and allow the cheese to mature for a minimum of 45 days.

It goes really well with figs. Grill it and drizzle a spoonful of jam or compote on top. It also works really well when paired with pomegranate or grapes. A slice of goat sirene baked in tin foil and sprinkled with our favourite savoury, mint and oregano is an exquisite delight to the palate.

The goats that make the milk are completely free to roam the hills and pastures of the Balkan mountains, looking for the most delicious, fragrant herbs and grass. Hence the beautiful flavour of harmonica's sirene, which is its greatest advantage.

This is a seasonal product, which means we will be cheese-less for a few months every year.
