Traditional Sirene

We translate our traditional Bulgarian white brined cow cheese as “sirene” as it is called in Bulgarian. Wandering why? Because we consider it to be a variety of its own. Just like parmesan, mozzarella, gruyere, brie, camembert, etc. that we love and remind us of the lands and nations they come from. Its closest relative is the Greek feta. Mildly salty, creamy, crumbly and sliceable.

Harmonica organic sirene is made from organic whole cow milk that we have from the two family cow farms high in the Balkan mountain we have worked with since the beginning of our story back in 2008 . Our organic cows spend much of their lives outdoors where they graze naturally on a diet of grass, clover, herbs and flowers. Тheir rich pasture diet is the key to the unique flavour of the milk and the high content of beneficial Omega-3 and CLA fatty acids.

What's in it

Certified organic cow milk, calcium dichloride, cheese yeast, salt and starter cultures. Let's repeat it again - sirene is extremely rich in proteins and good fatty acids thanks to the free-range lifestyle and feeding of our cows.

How's it made

We heat the raw milk to 72C degrees for mild pasteurization and add the starter cultures to respect the traditional sirene recipe. Thanks to the fermentation and ripening, the dairy proteins are easier to digest and absorb, while the salty brine preserves the cheese and its beneficial micronutrients. That is why we leave our sirene to age for minimum 45 days. Thus, all biochemical and microbiological processes within its structure happen naturally with no external catalytic tricks. The traditional starter cultures that we use, Lactobacillus bulgaricus and Streptococcus thermophilus, are not just a matter of honour, but a guarantee for the authentic tangy flavour. Ripening in a salty brine for at least 45 days is another process that we handle with great care, in order to strengthen the unique flavours and fortify the exceptional nutritional values.
