Different and yet the same… That’s how we are in the Balkans, especially when it comes to national cuisine. And because we value both the similarities and the differences between the Balkan countries, we decided to offer you a favorite traditional Balkan recipe, widely spread in Macedonia and Serbia – ajvar.
Ajvar reminds of the Bulgarian lyutenitsa spread, though there is one main difference. To prepare ajvar instead of red tomatoes you must use eggplant. If you still can’t quite imagine it, there’s one great way to feel the difference – just try it!
