We use the ancient old recipe from South and Central Europe for making our traditional red wine vinegar. Of course its main assets are tested when added to you favourite salads. But there are a few typical Bulgarian soup recipes that are just unimaginable without some vinegar with smashed garlic in it. One of them is the „shkembe chorba“ that every foreigner who has ever been around would remember for the rest of their lives, especially on a hard post-Saturday night morning.

How it's made
The vinegar goes through 2-stage fermentation. In the first stage, we ferment the red grapes to fruit alcohol. Once the first phase is completed, we apply special conditions (temperature and oxygen) in order to activate the second fermenting stage in which alcohol is converted into acetic acid.
