How it's made
We use only milk from organic certified sheep farms. That means living outdoors and grazing on grass, flowers, herbs and clovers the warm half of the year and enjoying organic feed in the cold.
And this natural diet in harmony with nature, gives the specific taste and aroma of the cheese in every season.
Thanks to the fermentation and long ripening, this cheese is easier to digest and absorb.
