Imagine organic honey turning into mead, then mead turning to unpasteurized and unfiltered vinegar… That’s not some kind of magic but simply the natural process of fermentation. Harmonica honey vinegar is made entirely of honey, as a result of two stages of fermentation. The production process is quite long but it allows the preservation of the precious nutritious qualities of the honey. And the result is delicious, sweet and all natural.

How's it made

The result of two stages of natural fermentation. We add water and leaven to the honey. Natural sugars feed the Saccharomyces cerevisiae bacteria which helps turn water into alcohol. This is the first stage of fermentation of honey into mead (honey wine). We leave the alcohol exposed at air and warm temperature. During this second stage of fermentation is the genesis of the Acetobacter which transforms the alcohol into acetic acid. Temperature and air control during the fermentation second stage are of great importance. They are key to having a delicious end result such as the harmonica honey vinegar.
