If there is one thing that unites everyone in Bulgaria regardless of age, religion, ethnicity, it’s our shared love of banitsa. Delicious goodness, the banitsa, is a pastry dish traditional for the Balkans. For centuries, the banitsa has been an irresistible treat in our menu that has never disappointed. Comfort food for breakfast!
Every family has its own special secret to making the best banitsa. Traditionally, it’s made of only eggs, white cheese, and yogurt wrapped in phyllo pastry. However, we share with you our own distinctive take on this beloved classic. Filled with some of our favorite products – yellow cheese, chickpeas, and sweet potatoes – this banitsa is an absolute flavorful delight.

1 package harmonica Phyllo pastry sheets with wholegrain flour
1 jar harmonica chick peas
250 g sweet potatoes
½ large onion
1 garlic clove, 1 teaspoon cumin, ½ teaspoon coriander, ½ teaspoon turmeric, a handful of spinach, salt
1 harmonica Kashkaval (cow yellow cheese)

Open the chick peas, rinse and blend for a second or two. Add it to the mix in the pan and stir a little more. Then remove the pan from the heat, add the spinach and stir it through until it wilts.

Before baking, grease generously with butter and make 2-3 holes with a knife.
Preheat the oven to 180C degrees and bake until the rolls are golden and the whole house smells like a bakery.
