Chick peas Phyllo Pastry Rolls

Delicious goodness, the banitsa, is a pastry dish traditional for the Balkans. For centuries, the banitsa has been an irresistible treat in our menu that has never disappointed. Comfort food for breakfast!

Every family has its own special secret to making the best banitsa. Traditionally, it’s made of only eggs, white cheese, and yogurt wrapped in phyllo pastry. However, we share with you our own distinctive take on this beloved classic. Filled with some of our favorite products – yellow cheese, chickpeas, and sweet potatoes – this banitsa is an absolute flavorful delight.

Ingredients::
1 package harmonica Phyllo pastry sheets with wholegrain flour
1 jar harmonica chick peas
250 g sweet potatoes
½ large onion
1 garlic clove, 1 teaspoon cumin, ½ teaspoon coriander, ½ teaspoon turmeric, a handful of spinach, salt
1 harmonica Kashkaval (cow yellow cheese)
Let’s start with the filling – the star of the dish. Finely dice the onion and sauté in a frying pan with some butter until tender. Throw in the garlic and leave for another 2-3 minutes. Add the spices, the grated sweet potato, and half a cup of water. Top the pan with the lid and let it simmer until the water has evaporated and the sweet potatoes are tender.
Open the chick peas, rinse and blend for a second or two. Add it to the mix in the pan and stir a little more. Then remove the pan from the heat, add the spinach and stir it through until it wilts.
When done with the “tricky” part, it’s time for a phyllo pastry art. Take a sheet, grease with butter and fold in the middle. Spread a spoonful or two of the filling in one end and top with two slices of the yellow cheese. Grease again with butter and fold as shown in the pictures.
Before baking, grease generously with butter and make 2-3 holes with a knife.
Preheat the oven to 180C degrees and bake until the rolls are golden and the whole house smells like a bakery.
