Harmonica fresh milk is an exceptional product that we are very proud of. First, the milk is from two family-owned organic cow farms in the Troyan Balkan. The cows are fed almost 100% on pasture, in summer on the meadows and in winter with fresh silage grown on the farms. The cows are never tethered and are outside almost every day of the year. Second, when it arrives at the dairy, the milk goes through minimal processing to reach you at its freshest and most authentic. We don’t discard it (a common practice), but preserve it as it was milked, with varying fat content depending on the season. We don’t homogenise it (another common practice), although this often results in a tasty cork on the neck of the bottle. We pasteurize it (at 93-95 °C for 20-30 minutes, just enough to give it enough shelf life to reach everyone).
