Meet the first member of harmonica’s dairy family that won 1 star from the prestigious UK-based Great Taste Awards in 2020. We’ve always wanted to create a real, delicious cream cheese. We spent a long time searching for the right recipe and developing the craftsmanship to get the desired smoothness, texture and flavor. We succeeded in making the traditional cream cheese that our older relatives may remember. The one with the slight yogurt-like taste, creamy flavor and velvety buttery texture. You’ll remember it too.

What's in it

Organic cow's milk, organic cream, starter, salt.

How it's made

To the milk add cream and the resulting mixture is homogenized and thermalized at a temperature of 76-78 ℃ for 20 seconds and immediately cooled to 22-24 ℃. The starter is added and left to ferment for 12-16 hours until the required acidity is reached. Salt solution is then added to the mixture and heated to 65 ℃, left at this temperature for 30 minutes
and stirred periodically. Cool the mixture and allow it to drain slowly. Finally, strain and refrigerate.
