Yet another old-time favorite recipe we decided to bring back to life. Searching for the ultimate pumpkin preserves know-how took us some extra time, but it definitely was worth the efforts. We found the best recipe in Southern Bulgaria and we are more than enthusiastic to share the results with you. How it's made
We peel and cut the pumpkin into small pieces. The day before we have prepared the solution. Our grannies used to make it with dead lime, but this is absolutely unacceptable for an organic product, so we make it with calcium chloride. The pumpkin rests for 24 hours in it, then we take out the solution and rinse the pumpkin several times. Now the pumpkin pieces are ready for the barrel to be covered with sugar syrup and boiled till certain thickness is reached. Finally they made their home to the jars.
