Meet our white cheese. Made with precision and purity, with organic fresh whole milk. It has a characteristic taste that depends not only on the craftsmanship and the length of ripening, but also on the season in which the milk is milked, as the animals graze differently

throughout the year. Good milking hygiene is also important, as this ensures that the pure flavour of the milk is preserved. The traditional Bulgarian cultures Lactobacillus bulgaricus and Streptococcus thermophilus and the long ripening period guarantee its valuable nutrition qualities. We do all this because it is a matter of honour for us to offer this food so beloved by all Bulgarians without any compromise.

What's in it

Organic cow's milk, calcium dichloride, yeast, salt, starter.

How it's made

We heat the raw milk to 72 o C for mild pasteurization and add the starter cultures to respect the traditional sirene recipe. Thanks to the fermentation and ripening, the dairy proteins are easier to digest and absorb, while the salty brine preserves the cheese and its beneficial micronutrients. That is why we leave our sirene to age for minimum 45 days. Thus, all biochemical and microbiological processes within its structure happen naturally with no external catalytic tricks. Traditional, craft and tasty.
