We translate our traditional Bulgarian white brined cow cheese as „sirene“ as it is called in Bulgarian. Wandering why? Because we consider it to be a variety of its own. Just like parmesan, mozzarella, gruyere, brie, camembert, etc. that we love and remind us of the lands and nations they come from. Its closest relative is the Greek feta. Mildly salty, creamy, crumbly and sliceable.
Harmonica organic sirene is made from organic whole cow milk that we have from the two family cow farms high in the Balkan mountain we have worked with since the beginning of our story back in 2008 . Our organic cows spend much of their lives outdoors where they graze naturally on a diet of grass, clover, herbs and flowers. Тheir rich pasture diet is the key to the unique flavour of the milk and the high content of beneficial Omega-3 and CLA fatty acids.
