Probiotic Ice Cream with Kefir and Sour Cream

Probiotic Summer recipe.

5 minutes + 2 hours in a fridge

800 ml of ice cream

500 ml kefir
200 ml sour cream
50 ml elderflower syrup
50 g sugar or honey
Raspberry jam

In a large bowl, whisk the sour cream and sugar. Add the kefir and elderflower syrup. If using an ice cream machine, pour the mixture in and let it mix for 30 minutes. When finished, transfer the mixture into a bowl and add the raspberry jam – make sure it doesn’t mix completely with the ice cream but is rather only spread around lightly. Place the mixture in the fridge for 2 hours.

If not using an ice cream machine, place the mixture in the fridge and stir every 30 minutes. Stir 2 or 3 times and at the last stirring, add the raspberry jam – make sure that it doesn’t mix completely with the ice cream but is rather only spread around ightly. Leave the mixture in the fridge for an hour more.

When the ice cream is ready, place in small bowls and let it stay for a few minutes so that it can loosen up a bit (if you can resist the temptation, of course!).
